Build the Levain: 9:00am. Mix together 30g sourdough starter, 30g bread flour, and 30g warm water in an empty jar. Cover and let set in a warm location (between 75-80ºF) for about five hours until bubbly and ripe. The levain should at least double in size during this time. Ripe levain for sourdough brioche. In a bread machine pan, add the water, milk, egg, and butter. Whisk together the sugar, flour, and salt. Spoon on top of liquid in pan. With a spoon, make a dip in the top of the flour. Add the yeast. Secure pan in machine, close lid, and set on dough cycle. Press start. Divide the dough into 10-12 even pieces. Roll the pieces of dough into balls (a lightly floured surface comes in handy here) and place on lined baking trays. Cover loosely with oiled cling film or a clean tea towel and leave for around 45 minutes -1 hour until the dough has doubled in size again. How To Make Cinnamon Sugar Brioche Buns. Let dough rest for approx. 1 hour or until doubled in size. Punch dough down and release all the air. On a lightly floured work surface roll dough out into a rectangle approx. 12 x 16 inches. Brush the dough with the egg wash and bake it for 30-35 minutes until brown. Meanwhile, combine the flour, salt and xanthan gum (if applicable) in a mixing bowl. Melt the butter in the microwave in 10 seconds increments. Make a well in the middle of the flour and add the frothy yeast/milk mixture, melted butter and 2 eggs.
